The Las Vegas/Rock n’ Roll/ Food Network/ Celebrity Chef recently brought his act to Atlantic City at the new and exciting culinary destination in the Hilton Casino & Resort.

The former Oaks Steakhouse has morphed into the ultra-sleek Simon Prime. This CIA chef (Culinary Institute of America) has literally taken the food world by storm and his success has little to do with beautiful restaurants and Rock n’ Roll. It’s all about the food and that comes from years of classical training and learning from the best. He began his career working with some of the great chefs of all-time – Jean-Jacques Rachou of La Cote Basque; Andre Soltner of Lutece; and Jean-Georges Vongerichten (New York and the world). His talent and enthusiasm for cooking quickly took him to the top and Simon Prime is a total reflection of Kerry Simon …. “My thinking is that the products are what drives a restaurant. If the products aren’t great then you don’t really have it all together. I think when you enter the room and see that everybody is really just kind of happy, eating, drinking, and there’s just sort of a relaxed, fun vibe to it. Everything just kind of falls into place. You can feel that in a good restaurant”.

The menu reflects Simon’s passion for intricately constructed meals, which includes everything from Meatloaf and Pot Roast as well as his Prime, Dry-Aged Porterhouse Steak for two; a rack of Colorado Lamb; or his Blackened Salmon with crawfish butter and bloomsdale spinach.
